In other exciting news  Warrior Princess Claire was discharged from the hospital earlier today. Welcome home sweet home {again} Claire! Every night before O goes to sleep he asks to see a picture of Claire. It's so cute. Maybe one day these two CDH warriors can meet in person but for now they are blog buddies.



This is what I have been living off of lately...
I  am  addicted.
I can't seem to get enough.
It's super easy to make and a great healthy snack,dinner or even breakfast. YES breakfast.
I told you I am  totally addicted to Cowboy Caviar,baby.

this is how you make it
1 can shoepeg corn - drained
1 can black eyed peas - rinsed
2 large avocados - cubed
roma tomatoes - chopped
2/3 cup cilantro - chopped - I just use 1 bunch
2/3 cup green onion - chopped - I just use 1 bunch
Dressing: Mix together in bowl and pour over ingredients above
1/4 cup olive oil
1/4 cup red wine vinegar
2 teaspoon chopped garlic
3/4 teaspoon black pepper
1/8 teaspoon salt
1 teaspoon ground cumin

"sneaky" pumpkin pancakes

I am well aware that we still have eleven days until Autumn with that being said it's never to early for pumpkins. I love love love anything pumpkin. Pumpkin pie a fall must have, pumpkin latte,pumpkin muffins, pumpkin pancakes. Who doesn't love pumpkin? and if you happen to be one of those few who don't well sorry for you this post is all about my all time fall favorite "sneaky" pumpkin pancakes.

You will need:

1 cup canned pumpkin
3 cups water
1/4 cup firmly packed brown sugar
1 tsp. ground cinnamon
1 tsp. ground nutmeg
4 cups of pancake mix (I use bisquick)
and of course the sneaky ingredient  1/4 to 1/2 cup purree carrots and sweet potato. Your child will never know that these delicious pumpkin pancakes have vegetables in them!

In a larger bowl, mix together pumpkin,sneaky ingredient, water,brown sugar,cinnamon and nutmeg until well blended. Add the pancake mix and stir until well combined (batter should still be slightly lumpy).

Heat a griddle over medium heat. Lightly oil the griddle and pour pancake batter, 1/4 cup at a time,to make 4 inch pancakes. 

I love to make these a head of the time and freeze them. On mornings on the go just pop a pancake or two in the microwave and wallah you have a mouth watering pumpkin goodness first thing in the morning.

Top them with maple syrup and a little bit of whip cream and enjoy!

So when I came across this recipe for scrambled egg pizza


I immediately ran out to the store for all the ingredients.

You will need:
1 pound store bought frozen pizza dough, thawed
3 potatoes,thinly slices
8 ounces thick sliced bacon,chopped
4 scallions,white and green parts thinly slice separately
4 eggs, beaten
salt and pepper
1/2 cup sour cream
1 cup Gruyee cheese 

Step 1
Preheat the oven to 400'. Spread the dough on a lightly floured 12 by 18 inch baking sheet and bake until the crust is fully cooked. About 15 minutes.

Step 2 In a large sauce pan,combine the potato slices and enough salted water to cover; bring to a boil. Darin and pat dry.

Step 3
Meanwhile,in a large non stick skillet,cook the bacon over medium low heat until crisp, 8-10 minutes. Transfer the bacon to a paper towel lined plate,reserving the bacon fat.

Step 4
Increase the heat to medium-high and working in batches,add the potato slices to the skillet. Cook turning once until golden, about 5 minutes; transfer to a paper towel  lined plate to drain. In the same skillet, add the scallion whites and cook until soft, about 2 minutes; add the potatoes 

Step 5
Wipe the skillet,lower the heat to low and add the eggs. Scramble until cooked.

Step 6
Spread the pizza crust with the sour cream and layer the topping. Return to the oven for about 5 minutes.

Fake Turtles

Early in the week when I went to my Moms Group cookie exchange. I fell in love with Fake Turtles! Thanks to my mommy friend Kari (I love you!!) for sharing this ridiculously easy kinda of addicting treat.

You only need three ingredients:
Rolo candies
Pecan Halves
Mini Preztels

Line a cookies sheet with aluminum foil.Place the Rolos on top of the pretzel.Put it in the oven for 4 minutes at 250 degrees,just enough to soften the Rolos. Remove from oven and press a pecan half into each Rolo, smushing the chocolate down. Refrigerate and enjoy.

or become completely addicted, that is what happened to me the moment  I tasted the goodness of the fake turtle.I might need to seek  help. Is their Fake Turtle Anonymous?Seriously?

I will let you in on a little secret I don't even really like pretzels or nuts but.....

mini brownies with a twist

This morning I,Owain and my mini brownies with a twist ventured out in the rain to meet some of my lovely mommy friends and have a sinfully yummy cookie exchange. I have a weakness for sweets and boy was I in heaven. Everywhere I looked their were cookies galore!I happily traded my mini brownie's for toffee popcorn (snacking on some at the very moment...YUM!),chocolate covered pretzels,nutty cookie,chocolate cookies,sugar cookies and much much more! Sinfully yummy cookie exchanges are awesome! My husband (who doesn't have a sweet tooth like I do) agrees he has already had several nutty cookies within the first five minute of us being home.
My mini brownies with a twist turned out sinfully yummy.
They may not look picture perfect like I imagined they would.

but they are tasty. If you are a chocolate lover. These are for you!

In each mini brownie I put a resses peanut butter cup in the middle.
They are sinfully gooooooood!
